| ARTICHOKE SQUARES
 2 small jars marinated artichoke
hearts
1 small onion, finely chopped
 garlic powder
 4-6 eggs
 1/4 cup bread crumbs
 salt and pepper
 1/4 tsp. oregano
 hot sauce
 2 cups grated cheddar cheese
 2 Tbsp. parsley
      Drain
marinade from one jar of artichoke hearts into 
frying pan.  Discard marinade from second jar. Chop
 artichoke hearts into small pieces and set aside.
      Saute
onions in marinade  about 5 minutes, until soft
and translucent.
      Beat
4 eggs in bowl.  Add remaining ingredients, 
including onion and artichokes.  If mixture is too
 stiff, add another egg or two and mix well.  Pour into
 greased 8 or 9" square pan.
      Bake
in preheated 325* oven for 30 minutes.

4-6 servings.
