Honeyed Carrots

3 Tbsp. butter
4 cups carrots, sliced in circles
3 Tbsp. orange juice
1  1/2 tsp. salt
1/4 tsp. ginger
4 Tbsp. honey

     Combine all the ingredients in a    sauce-
     pan.  Cover and simmer over low heat 25 
     minutes, stirring occasionally.  

     Serves 6.

     Note:  To make this recipe vegan, 
     substitute soy margarine for the butter.
