RUSSIAN TEACAKES
also known as MEXICAN WEDDING CAKES

1  1/3 cup butter, softened
2/3 cup powdered sugar
1 1/2 tsp. vanilla extract
3 cups flour
1/4 tsp. salt
1 cup finely chopped pecans

     Mix butter, sugar, and vanilla thoroughly.  Blend in
     flour and salt.  Mix in nuts, using hands if necessary
     to thoroughly mix dough.

     Shape dough into 1" balls and place 1  1/2" apart on 
     cookie sheets.

     Bake in preheated 400* oven for 10-12 minutes, until 
     just beginning to brown.

     While still warm, roll in powdered sugar.

     Cool on wire racks.

     When cool, roll again in powdered sugar.

     Makes 5-6 dozen cookies.

    Note:  You can make this recipe vegan by using
     soy margarine instead of butter ... but it won't
     taste as good.
