SCOTTISH SHORTBREAD

2 cups flour
1 cup butter, softened
1/2 cup powdered sugar
1/4 tsp. salt
1/4 tsp. baking powder
1 tsp. vanilla extract
2 Tbsp. sugar

     Preheat oven to 350*.
     In large bowl, mix flour, butter, powdered sugar, salt, 
     baking powder, and vanilla until well blended, using 
     hands to blend if necessary.

     Press dough into 9" round cake or torte pan and prick
     well with fork.

     Sprinkle with sugar.

     Bake for 30-35 minutes.

     Cut into wedges or squares while warm.  Cool entire 
     pan on wire rack.  Separate into cookies when cool.

     Makes 14 wedges or 30 small square cookies.

     Note:  For a vegan version of this recipe, you can
     substitute soy margarine for the butter ... but I 
     wouldn't recommend it unless you really can't
     tolerate butter, as the flavor really suffers from
     its absence!
