SESAME NOODLES WITH TOFUKAN

for Jesus Family Cookbook}
1/4 cup creamy peanut butter
1 Tbsp. honey
2 tsp. vinegar
1 Tbsp. soy sauce
1/2 cup bouillon
1/2 tsp. sesame oil
1/4 tsp. hot sauce
1 package tofukan [marinated
tofu], cut in strips
1 small onion, chopped
8 oz. soba noodles, fettucini,
or thin spaghetti
scallions, crushed peanuts--optional
optional: 1 jar of Thai
peanut sauce

use 12 - 16 oz. noodles
Mix peanut butter, honey, vinegar, soy sauce,
bouillon, oil, and hot sauce in blender.
Saute tofukan and onion in hot oil until browned.
Cook noodles according to package directions.
Mix noodles, sauce, and tofukan. If desired,
add jar of peanut sauce, after heating it for 90
seconds in microwave. If too cold, reheat in
microwave. Top with scallions and peanuts, if
desired.
Makes 4-8 servings, depending on amount of
noodles used.
