VEGETABLE QUICHE

1 recipe dinner pastry
1  1/2 cups grated cheese, cheddar or Swiss
1 medium onion, chopped
1 package frozen, chopped spinach, defrosted and drained
or
 1 package frozen, chopped broccoli, defrosted and drained
or
1 - 2 cups sliced mushrooms
4 eggs
1 1/2 cups milk
3 Tbsp. flour
1/4 tsp. salt
1/4 tsp. dry mustard
paprika

     Prepare dinner pastry according to directions.  Roll out 
     dough to form circle to fit 9" pie pan.  Fit dough into pan. 
     Cover bottom of crust with grated cheese.

     Saute onion ( and mushrooms, if used ) in butter.  Mix with 
     drained spinach or broccoli ( if used ), and arrange on top
     of cheese in pie pan.

     Beat eggs, milk, flour, salt, and mustard well in a medium
     bowl.  Pour gently over spinach layer in pie pan.  Sprinkle
     with paprika.

     Bake in preheated 375* oven for 40-45 minutes, or until solid
     in the center when jiggled.

     Makes 4-5 servings.
